Step-by-Step Litti Chokha Recipe

Step 1: Prepare the Dough for Litti

Take wheat flour in a bowl. Add salt, ajwain, and oil. Mix well with your fingers. Slowly add water and make a firm dough.

The dough should not be very soft. Cover it and keep it aside for 15–20 minutes.

Step 2: Make the Sattu Stuffing

Take sattu in a bowl. Add onion, garlic, ginger, green chilli, coriander, salt, ajwain, and kalonji.

Now add mustard oil and lemon juice. Mix everything properly. The stuffing should feel moist but not watery.

Taste it and adjust salt or lemon if needed. This stuffing gives litti its real flavour.

Step 3: Shape the Litti

Divide the dough into equal balls. Flatten one ball slightly and place sattu stuffing in the center.

Close it carefully and roll it into a round ball. Make sure the stuffing is fully covered.

Prepare all littis in the same way.

Step 4: How to Cook Litti

Method 1: Cooking Litti on Gas Stove

Place the littis directly on a low flame or on a wire rack. Cook slowly and keep turning them.

They will puff slightly and get brown spots all around. This takes about 15–20 minutes.

Method 2: Baking Litti in Oven

Preheat oven to 180°C. Place littis on a baking tray and bake for 25–30 minutes. Turn once in between.

Once cooked, dip the hot littis in desi ghee.

Step 5: How to Make Chokha

Roast brinjal and tomatoes directly on gas flame until the skin turns black and the vegetables become soft.

Boil the potatoes separately.

Peel everything and mash in a bowl. Add onion, green chilli, garlic, salt, mustard oil, and coriander.

Mix well. Chokha should be slightly chunky, not smooth.

How to Serve Litti Chokha

Serve hot litti with chokha and extra ghee on the side. Break the litti by hand, dip it in ghee, and eat with chokha.

This is the traditional way to enjoy Bihari litti chokha.
